Restoration soup

Tom Ka Gai creates a bold display of vibrant colors for the table, and a definitive striking balance for the palate. This restorative soup arouses vigor and vitality. Truly “drink to your health”. Out of all of the “bring back your health” recipes, this is the most sought after, after a long Hampton’s weekend. Prepare on Friday night and have it ready to go. It’s brought many non moving souls back from the edge.

3 13.5 Oz can of organic chicken broth (or organic vegetable broth)
2 13.5 cans of coconut milk
1/2 cup of lemon juice, or the juice of 4 lemons
2 Tablespoons of red curry paste (add more to taste)
2 large ginger roots, pealed minced or cut thinly with a peeler
1 minced vidalia onion
1/2 a bunch of fresh cilantro stems removed
1 container of grape tomatoes cut in half

Mussels

Bring all the ingredients except the tomatoes and the cilantro to a simmer (never boil your soup). Turn the flame down, use a ladle to fill bowls and top with tomatoes and cilantro. The tomatoes should be sassy and fresh so try grabbing them at one of the local farm-stands or try some of the heirloom varieties as there are plenty to choose from. Try adding any favorite veggies to taste. Or, for a totally different recipe; carefully clean and steam a small bag of mussels, use the broth as a base then add 1/2 a can of Coco Lopez and stir. Once it’s melded into the broth, add the rest of the ingredients (minus the chicken broth) and you have a seafood version as pictured above.
